Busy night? Serve up #DinnerIn15 @MapleLeafPrime Chicken Tex Mex Soup!

I need a fast meal to feed my two teens, Hubby and myself, and I need it now! 
Tick Tock goes the voice in my head ... Tick Tock ... Change that Tick Tock to Tex Mex, cause soup's on!
What is easier or more satisfying than a hearty almost made from scratch soup and toast fingers to dip!


Tex Mex Chicken Soup #DinnerIn15

Serves 4 

Ingredients:

  • A package of chicken noodle soup mix
  • 1 1/2 cups of Maple Leaf Prime Oven Roasted Chicken Strips  (chopped into 1 inch pieces)
  • 1 cup of cooked rice
  • 1 1/2 cups of drained mixed beans
  • 1 1/2 cups - 2 cups of prepared salsa
  • 1/2 cup of frozen corn (optional)
  • dollop of sour cream to top soup with
  • 4 toasted slices of Villaggio Bread  cut into fingers, or tortilla chips to dip into your soup

Directions: 

  1. Bring 1 litre of water to a boil. 
  2. Whisk in soup mixture.
  3. Once soup mixture is fully incorporated, add the rice, salsa, beans, frozen corn, and Maple Leaf Prime chicken. 
  4. Cover and simmer for 5 minutes or until the ingredients are heated through.
  5. Divide the soup into 4 bowls.
  6. Add a dollop of sour cream in top of each bowl of soup.
  7. Service with toast fingers and tortilla chips to dip.


For an Italian style variation to this recipe substitute salsa with drained diced tomatoes, and top with Parmesan cheese.

  8. This would be a great meal for my family. My kids love beans, chicken noodle soup, corn, all of it! I like that you can add pretty much anything to the soup. You know how I love to substitute. I'll be adding this one to my list of dinner meals. Thanks for sharing.

  14. Great ingredients with a new twist, we will be sure give it a try. We used villagio bread for our stuffing at thanksgiving and it was delicious!

  17. Thanks for the great tip Cathy! Some nights the thought of making dinner is just overwhelming, but a yummy meal like this in just 15 minutes is a great motivator to put down the take-out menu and get cooking --better yet, teach the kids to make it!!

  18. Looks good, but how high is the sodium in a dish like that? We're not cutting out sodium in the house, but we are trying to limit it.

    1. Jim you can easily make this with a low sodium or reduced sodium store bought broth and soup noodles instead of a mix. I often make my own broth and freeze it for quick meals. Also be sure to rinse the beans very well to reduce the sodium. Best part about this recipe is that you can adapt it to your taste and dietary restrictions.
